Cherry Petits Fours

Cherry petits four, here we go! i actually have no idea why did i even make this cookie. HAHA! Was about to meet up with a friend for dinner so i thought why not some small treats for them? Apparently i was flipping thru one of my recipe book and this caught my attention and i apparently have all the ingredients at home. Believe it or not, these are so simple to make 😀 *plus point

These small cookies are actually very flavorful as they are made with almond flour  & best of all, all you need to wash up would be a bowl & a wooden spatula 😀

Recipe

Ingredients

  • 1 1/4 cups (125g) finely ground almonds
  • 3/4 cups (125g) confectioners’ sugar
  • 2 large egg whites
  • 1/8 teaspoon salt
  • 12 candid cherries chopped

Instructions

  • Dust 2 cookie sheets or lay them with parchment paper
  • Mix the almonds, confectioners’ sugar, egg whites, and salt in a large bowl until smooth
  • Fit a pastry bag with a 1/2 inch star tip. Fill the pastry bag and squeeze out rosettes, spacing 1 inch apart (Makes about 25 cookies)
  • Place a piece of candied cherry on top of each cookie
  • Refrigerate for 30 minutes
  • Preheat oven to 475F (250C)
  • Bake until lightly browned at the edges, about 5 mins
  • Transfer to rack to cool

 

Piped Rosettes

Pack them into small bags and you are ready to give them away! They are so fuss free and great as small treats to friends 🙂

Sorry about that awful rubberband! i was in a hurry to leave the house and i cannot find my wires to tie them up!
