Chewy Chocolate and Peanut Butter Chip Cookies

i have been on a baking spree lately! Presenting to you all: Chewy chocolate & peanut butter chips cookies 😀

These little monster packs a punch and tasted sorta like subway cookies (soft kind). But if you prefer hard cookies, just add a little emplex in it. No worries bout that!

Guess what?!! All these yummylicious monsters are made with whole wheat flour and brown sugar. *just to feel less guilty with that amount of peanut butter and chocolate chips added into it! i’m sure i added more that what was required! HAHA

i’m seeing many animal faces in this plate of cookies! Try spotting them. i actually see pigs, panda, bears, dogs, cat, monkey

Have fun! although there’s no prize in guessing them correctly :p


  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 1 cup packed light or dark brown sugar (I used dark brown sugar)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon espresso powder (optional) (I definitely used the espresso powder!)
  • 1/4 teaspoon baking powder
  • 1/3 cup light corn syrup or brown sugar corn syrup (I used light corn syrup)
  • 1 tablespoon cider vinegar
  • 2 large eggs
  • 2 1/4 cups traditional whole wheat flour
  • 1 1/2 cups semisweet or bittersweet chocolate chips & 1 1/2 cups of peanut butter chips


  • I melted the butter on the stove and stirred in the brown sugar until it just begins to bubble. When done, pour the mixture into a bowl and cool it till room temperature (i used mixing bowl so that i could just get the dough mixed in it)
  • Stir in the vanilla, salt, baking soda, espresso powder, baking powder, corn syrup and vinegar
  • Beat in 2 eggs followed by adding the flour
  • Throw in ur chips and give it a light stir until it looks well mixed
  • Refrigerate ur dough overnight and you are all ready to work with it (i reckon 3 hours will be good enough)
  • Preheat oven to 180C and bake for 8-10 mins depending on your oven (they would come out a little soft and would harden a little as it cools down)
  • Transfer to cooling rack after you are done with it 😀

Sift in flour and mix well! do not over mix the mixture

Check out that sheer amount of chips used in this recipe *i cheated & added a little more 😛

The dough might look a little wet, no worries about it! Just stash it in the fridge for a couple of hours and they would come out fine.

Tear dough into small pieces and remember to leave spaces in between them as they spread a little while baking

Cool the cookies on the cooling rack! you might be tempted to just steal a couple while waiting for it to cool down. *i’m guilty of that

All done! believe it or not, it took me less than an hr to bake all these! Really quick recipe *i like to bake fuss free
