What a busy day i had! A really quick update before i hit the sack! made about 50 snowskin mooncakes, another 30 baked mooncake, cooked dinner and decided that all that wasn’t enough for me. Headed to the kitchen right after dinner and viola, Banana chocolate Loaf! i’m so trying to make full use of the last week of my school holidays, so it’s intensive baking, cooking and updating of blog!

This loaf was really moist and perfumed with the aroma of over-ripe bananas, filled with lots of chocolate chunks, walnuts and pistachio. Definitely a loaf for someone on “diet”. It’s oil & butter free and i’m using brown sugar instead of regular sugar, *plus point 😀

i belong to the group of bakers that buys a bunch of bananas for it to ripe at home! i would say this loaf is a cross between a cake & a bread, overall not too sweet and packed with nuts and chocolate! And what’s more? it’s a fuss free recipe! Everything mixed into a bowl, whisk and you are ready to go!

Recipe

Adapted from Cuisine Paradise
Yields 3 small loafs

ingredients

  • 300g Self-raising Flour
  • 85g Brown Sugar
  • 50g Pistachio Nuts, coarsely chopped
  • 50g Walnuts, coarsely chopped
  • 100g Dark Chocolate cubes
  • 1 teaspoon Baking Soda
  • 2 Eggs, lightly whisked
  • 1 teaspoon Vanilla Extract
  • 250ml Fresh Milk
  • 1 Cup Mashed Banana

Method

  1. Preheat oven to 180c
  2. Sift flour and baking soda into a large bowl
  3. Add in brown sugar, nuts & chocolate, stir to combine
  4. Add in milk, eggs, mashed banana and gently fold the mixture till well combined
  5. Spoon mixture into baking pan and top it off with extra nuts and chocolates
  6. Bake for 30mins or till stick comes out clean

it’s rare that i actually do not procrastinate and update the recipe on the night i bake! But procrastination is definitely here to stay since my school term is going to start next week! i’ll try to update the baked mooncake version as soon as i’m done with all my orders! i a little scared of staring at mooncakes now! 😀

  1. I baked it this morning for morning tea and it was moist and smell so nice! Loved to idea of not having butter/oil. More healthy but I added mascarpone and homemade toffee sauce when I served. hehehe cant go wrong right?
